1 pound of smoked sausage, sliced into thick rounds
4 medium-sized potatoes, cut into small chunks
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley (optional)
Directions
Preheat your oven to 400°F (200°C).
In a large oven-safe skillet, heat the olive oil over medium heat.
Add the sliced sausage and cook until they are browned on both sides, about 5 minutes. Remove from skillet and set aside.
In the same skillet, add the potato chunks. Sprinkle with garlic powder, onion powder, salt, and pepper.
Stir to coat the potatoes in the seasoning, then arrange them in a single layer.
Transfer the skillet to the oven and roast the potatoes for about 25 minutes, or until they are golden and tender.
Remove the skillet from the oven and add the sausages back in, distributing them evenly over the potatoes.
Sprinkle the shredded cheddar cheese over the top.
Return the skillet to the oven and bake for another 5-10 minutes, until the cheese has melted and is bubbly.Advertisement
Garnish with chopped fresh parsley if desired, and serve warm.
Variations & Tips
For a heartier version, add some sliced bell peppers or onions when roasting the potatoes. If you prefer a spicier dish, use a spicy sausage or add a pinch of red pepper flakes to the seasoning. For a different cheese option, try using Monterey Jack or a blend of Italian cheeses for a unique flavor profile. To make it a more balanced meal, consider adding a green vegetable like broccoli or green beans into the mix.
