This is a dish my grandma prepared when I was young, and it remains delicious even now!

2 cups fresh spinach leaves
1 can (15 oz) corn kernels, drained
3 large eggs
1 cup shredded cheddar cheese
1/2 cup milk
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 tablespoon butter, for greasing
Directions
Preheat your oven to 375°F (190°C).
Grease a medium-sized baking dish with butter.
In a large mixing bowl, whisk together the eggs, milk, flour, salt, pepper, and garlic powder until smooth.
Stir in the corn kernels, fresh spinach leaves, and half of the shredded cheddar cheese.
Pour the mixture into the prepared baking dish, spreading it evenly.
Sprinkle the remaining cheddar cheese over the top.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.

Let it cool for a few minutes before serving.
Variations & Tips
For a bit of a kick, add a pinch of red pepper flakes or diced jalapeños to the mixture. If you prefer a different cheese, try using mozzarella or Monterey Jack for a milder flavor. You can also add cooked bacon or diced ham for an extra layer of flavor. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
