4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 cup vegetable oil
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
Fresh basil leaves for garnish
Directions
Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and pepper.
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, oregano, and garlic powder.
Dredge each chicken breast in flour, then dip in the egg, and finally coat with the breadcrumb mixture.
Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken breasts until golden brown on both sides, about 3-4 minutes per side.
Transfer the fried chicken to a baking dish. Top each piece with marinara sauce and mozzarella cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil leaves before serving.
Variations & Tips
For a lighter version, you can bake the breaded chicken instead of frying it. Simply place the breaded chicken on a baking sheet and bake at 400°F (200°C) for about 20 minutes before adding the sauce and cheese. For a gluten-free option, use gluten-free breadcrumbs and flour. You can also experiment with different cheeses, such as provolone or fontina, for a unique twist. Adding a pinch of red pepper flakes to the marinara sauce can give the dish a spicy kick.
