My husband tried it and immediately wanted the recipe!

2 large onions, cut into 1/2 inch rings
8 ounces of mozzarella cheese, cut into sticks
1 cup of all-purpose flour
2 beaten eggs
1 cup of breadcrumbs
1 teaspoon of garlic powder
1 teaspoon of paprika
Salt and pepper to taste
Cooking spray
Directions
Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
Carefully separate the onion rings and stuff each ring with a mozzarella stick.
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
Coat each stuffed onion ring in flour, then dip in the beaten eggs, and finally coat with the seasoned breadcrumb mixture.
Arrange the coated rings on the prepared baking sheet and spray lightly with cooking spray.
Bake in the preheated oven for 15-20 minutes, or until the rings are golden and crisp.
Allow the rings to cool slightly before serving with your choice of dipping sauces.
Variations & TipsFor a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture. You can also experiment with different cheeses, such as cheddar or pepper jack, for a unique flavor twist. If you prefer a gluten-free option, substitute the all-purpose flour and breadcrumbs with gluten-free alternatives. For an extra crispy texture, try double-dipping the rings in the egg and breadcrumb mixture before baking.
