Preheat your oven to 375°F (190°C).
In a skillet over medium heat, add olive oil and shrimp. Sprinkle shrimp with Cajun seasoning and cook until pink and opaque, about 3-4 minutes. Remove from heat and chop into bite-sized pieces.
In a large mixing bowl, combine cream cheese, sour cream, mayonnaise, cheddar cheese, Parmesan cheese, and lemon juice. Mix until smooth and creamy.
Fold in the cooked shrimp and half of the green onions into the cream cheese mixture.
Transfer the mixture to a baking dish or ramekin and spread evenly.
Bake in the preheated oven for 20-25 minutes, or until the top is golden-brown and bubbly.
Remove from oven and let cool slightly before garnishing with the remaining green onions. Serve warm with slices of toasted baguette.

For a milder version, reduce the Cajun seasoning by half and add a pinch of smoked paprika for flavor without too much heat. If you have picky eaters, you can substitute the shrimp with cooked chicken or omit it entirely for a vegetarian version. Add a bit of chopped bell pepper or jalapeno for extra texture and spice. For a lighter option, use Greek yogurt in place of sour cream.
