🧀 Delicious Homemade Cheese
Ingredients (makes about 1 cup)
4 cups (1 liter) whole milk (the richer, the better)
2 tbsp lemon juice or white vinegar
¼ tsp salt (optional, for flavor)
Instructions
1. Heat the milk:
Pour milk into a large saucepan.
Heat over medium heat until it begins to simmer gently (about 190°F / 88°C).
Don’t let it boil over — stir occasionally to prevent scorching.
2. Add acid to curdle:
Once the milk is hot, turn off the heat.
Slowly stir in the lemon juice or vinegar, one tablespoon at a time.
You’ll see the milk separate into white curds and a greenish whey almost immediately.
3. Strain:
Line a colander with cheesecloth or a clean kitchen towel.
Pour the mixture through to separate the curds from the whey.
Let it drain for about 10–15 minutes.
4. Season (optional):
Sprinkle salt over the curds and gently mix.
5. Shape or serve:
