Creamy Cajun Chicken Spaghetti with Garlic Mozzarella Sauce

Instructions:

Cook the Spaghetti:

In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the spaghetti and set aside.
Prepare the Cajun Chicken:

In a bowl, toss the sliced chicken with Cajun seasoning, salt, and pepper until well coated.
In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

Make the Garlic Mozzarella Sauce:

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Italian seasoning, salt, and pepper to taste. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

Combine Everything:

Add the cooked spaghetti and Cajun chicken to the skillet with the garlic mozzarella sauce. Toss everything together until the pasta and chicken are well coated in the sauce.

Serve:

Plate the creamy Cajun chicken spaghetti and garnish with chopped fresh parsley. Serve immediately.
