Believe me, this is the easiest and most delicious potato dish you’ll ever try!

Prepare the Sweet Potatoes

Wash and scrub the sweet potatoes thoroughly. Pat them dry.

Prick each potato several times with a fork to allow steam to escape.

Slow Cook

Place the sweet potatoes in the slow cooker.

Cover and cook on LOW for 6-8 hours (or until tender when pierced with a fork).

Preheat Oven & Prep Potatoes

Once cooked, carefully remove the sweet potatoes and let them cool slightly.

Preheat the oven to 400°F (200°C).

Stuff the Potatoes

Cut each sweet potato lengthwise (without slicing all the way through).

Fluff the insides gently with a fork.

Add a small pat of butter to each, then season with salt and pepper.

Stuff with shredded cheddar cheese and crumbled bacon.

Bake to Melt Cheese

Place the stuffed potatoes on a foil-lined baking sheet.

Bake for 10-15 minutes, or until the cheese is bubbly and melted.

Serve

Garnish with chopped chives or green onions (if desired).

Serve warm as a hearty side or main dish.

Variations & Tips
Cheese Swap: Try mozzarella, gouda, or pepper jack for extra flavor.

Vegetarian Option: Skip the bacon and add sautéed mushrooms, spinach, or black beans.

Spicy Kick: Sprinkle with red pepper flakes or drizzle with hot sauce.

Creamy Finish: Top with sour cream or Greek yogurt for tanginess.
